Instead of using Canadian bacon, try substituting with smoked salmon for a delicious twist on your Eggs Benedict.

Use a muffin tin to poach several eggs at once for a large batch of Eggs Benedict.


Fill each cup with a little water, crack an egg in, cover with foil, and bake at 350°F until whites are set.
